Taking A Recipe From The Past - And Never Lose It Again

Sometimes the simplest and most basic solutions are the best. Take organizing recipes for example. Some folks try to organize their recipes online. That’s fine for storage but what do you do when it’s time to actually make the recipe? Put your computer in the kitchen? Even if you have a laptop, the kitchen counter is probably the least safe place you could put it. Liquid and computers don’t mix. You could print the recipe out each time you need it but that’s a real hassle. You could also just run back and forth from your computer to the kitchen. That means of course that you’ll have to memorize each step which again is another hassle.

Why not use the same tried and true solution your great grandmother used, and probably your grandmother and your mother too? The good “old fashioned” recipe box. Here are two great recipes to get you started.

Molasses Marinated Salmon

2lb Salmon Filets
½ - ¾ cup molasses
2 tbs canola oil
4 tbs soy sauce
2 tsp dry mustard
2 tsp ginger
2 tsp garlic

Whisk molasses through garlic together in bowl. Place salmon filets in a baking dish and pour mixture over the top. Cover and marinate for 1-3 hours.

Remove from refrigerator, uncover, and bake for 9-12 minutes or until the fish flakes easily, at 375 degrees.

Smoked Cheese and Scallion Muffins

2 cups all purpose flour
1 tbs baking powder
¾ tsp salt
¼ tsp pepper
¼ tsp dried thyme leaves crumbled
1 large egg
1 cup milk
½ cup chopped fresh tomato
¼ cup thinly sliced scallions (green onions)
4 oz smoked gouda, provolone, or mozzarella cheese cut into ¼ inch cubes
4 tbs melted butter

Heat oven to 375. Prepare muffin tins with cooking spray (do not use foil or paper cups) Mix dry ingredients, flour through dried thyme, in a large bowl. Whisk egg and milk together in a separate bowl. Stir in tomatoes, scallion, cheese, and butter. Pour mixture over dry ingredients and fold in until mixture is moist. There will be lumps.

Scoop mixture into muffin pans and bake for 25-30 minutes. Makes 12-14 muffins. Serve warm.
